Hi! My name is Elizabeth McGrath and I live with my wonderful husband and two amazing kids in McKinney, Texas. I love baking. I've been baking since I was a kid, and come from a family of strong women who taught me how to bake and who also loved baking.
I started a Keto diet about two years ago. After ten years and two kiddos, my health was failing me and I was miserable. I was overweight, suffering from an auto-immune condition, insulin resistance, and I was dealing with severe chronic pain and fatigue on a daily basis. As someone who used to be very healthy and active, this was a very hard time for me.
After much much research on dietary changes and after testing multiple different diets (whole food diet, autoimmune diet), I settled on the Keto diet and removed wheat and sugar from everything I ate. And ya'll- the change was ASTOUNDING. The pain dissipated quite a bit and I had more energy than I'd had in years! I had improved movement and I was able to accomplish projects and workout like I used to! I decided to adopt the Keto way of life for good.
But...I love sugar! I love baking and I used to bake scrumptious sugar-filled, wheat-filled desserts from my Grandmother's cookbook. I still had my Grandma's cookbook and all my old family recipes, and I was devasted that I couldn't eat the standard sugar-filled flour made cakes and cookies from my past. So I decided to learn how to make those amazing delectable desserts with Keto ingredients and surprise! They tasted really really great! I started making desserts that even my kids couldn't tell were sugar-free and wheat free! I was on to something.
The idea for a bakery has been in my head since I was a little girl. I am an entrepreneur by heart and have always dreamed of owning my own bakery or restaurant. I felt that there was a severe need to get low carb and sugar-free desserts to the public because I was having a difficult time finding keto-friendly desserts that tasted good! So with a lot of prayers, I decided to open The Keto Sweet Shoppe. I hope you enjoy the desserts that I make, and I am very grateful for this opportunity to serve my community.
